Last blog I mentioned some quick recipes that will get you through the week and you can reuse parts of them for your meal the next day - top tip from Nadiya Hussain (UK)

Day 1: Meatball curry in red sauce and pasta. (add 2tsp of cumin, 1tsp salt and a dash of pepper, to 1kg of mince; add it to some boiling water ) you can flavour the water with onion, ginger, garlic, cumin and salt but remove the whole pieces before you add the tomato sauce. Pour it over your favourite pasta.

Day 2: The next day you can add boiled eggs to the meatballs and eat with some (shop bought) naan bread or white rice. You can make a quick chutney to add a bit of zing.

(Green Coriander and Mint Chutney Recipe: combine coriander leaves, mint leaves, curry leaves, peanuts , ginger, green chillies, sugar, lemon juice, salt to taste and grind to a smooth paste in a blender. Add very little water to blend the chutney well. www.archanaskitchen.com)

Day 3: Make a quick chicken stir-fry with white rice (fry some boneless chicken breast or thighs, in a wok, add a dash of soy sauce and sesame oil, and some frozen wok-style veggies. Serve it with a crisp salad with some fresh lettuce leaves and cherry tomatoes.

Day 4: Take the leftover chicken and make a pasta bake with some frozen broccoli and béchamel sauce. (layer chicken and sauce in a dish and grate cheese over the top - heat it up in the oven for 10 mins then grill the top for a nice colour!)

Day 5: Roast a chicken (use your favourite Nandos marinade, marinate the day before for best flavour) chuck it in the oven for an hour the next day and microwave some potatoes or fry some chips and boil your favourite veggies.

Day 6: Remove the leftover chicken from the bone, add a shawarma spice mix, warm up in the oven, slice some peppers/tomato/onion and add to the chicken. Roll it up in tortilla wraps for a quick easy supper.

Day 7: Make some lentil soup, literally boil a cup of lentils in two cups of water, when it starts to cook. In a frying pan add some oil, fry a chilli and some chopped ginger and garlic with cumin and salt; pour this mixture into the lentils, stir it and add a handful of coriander leaves. Perfect with some bread rolls and a salad for some extra colour.
